I apologize for two cupcake posts in a row, but lets just say I was coerced (albeit, with minimal effort) into this one. Every frat boy's fantasy - irish car bomb cupcakes. There's Guinness in the chocolate batter, Jameson in the chocolate ganache that fills each cupcake, and Bailey's in the buttercream frosting on top. Talk about rich.
The recipe I used was from Sassy Radish and she got her recipe for Smitten Kitchen. Either way these certainly seem to be making their way around the food blogosphere. They were fun to make and incredibly rich and delicious to eat. The sour cream kept the chocolate cake oh-so moist and the Bailey's frosting was sweet and bright. I didn't use any of the fancy equipment, but I did find some colorful sprinkles to make things a bit more playful. These cupcakes were certainly worth the effort and are guaranteed to be a St. Patrick's Day necessity for me. Cheers!

Oh my goodness lizzy, those cupcakes were amazing! My roomies totally demolished them. Maybe a birthday cake made from that recipe next time? Think about it - this is a blatant hint :)
